Favorite Foods-Taco Salad

I wanted to start posting more on my blog but couldn't figure out what more to talk about other than my workouts. I mean there's only so many ways you can say "I worked out today." Then I thought about it and it came to me while scrolling through the 600 pictures on my phone. I take a lot of pictures of my food.  I don't know why , maybe it's because I was never a cook. I was never that creative in the kitchen.  I don't like to experiment at all.  Unlike my husband who will throw anything within arm's reach into the pot to cook. I have to follow directions down the very teaspoon.  That's why I love recipes that are clear and concise!  Otherwise my meals would be complete disasters. Just ask my husband. LOL

Anyway, like I was saying I like taking pictures of my creations.  Feel a sense of pride when it comes out good and my family eats it up!  The fact that it's healthy is an added bonus! So I will start featuring some healthy recipes that I've come in contact with along my journey.  I take from lots of sites on the Internet.  This one comes from my personal trainer, Jon Gustin. He's an up and coming personal trainer and nutrition specialist. He's been teaching me a lot of different exercises and especially the importance of stretching after my workouts which I usually fail to do.  Jon has to get on me daily about using my foam roller to help with my soreness in my knees and hamstrings, especially after I run. This taco salad was a hit with my husband and very easy to make. My 2 year old is another matter.  I don't think he's figured out that you can eat lettuce it's not the same as that green stuff he runs around in outside!  LOL!

 Hope you enjoy….

Ingredients:
1 lb lean turkey or lean ground beef
1 15oz can of black beans (drained and rinsed)
1 can low sodium tomato sauce
1-teaspoon olive oil
½ onion chopped
1-3 cloves of garlic
Lettuce
Tomatoes
1 oz of light cheese
2 tbsp salsa
Preparation:
1. Heat oil in a non-stick skillet over medium heat. Add the onion and garlic to cook. Stir for about 2 minutes. Add turkey or ground beef, stir often and crumble with spatula until cooked through, about 5 minutes. Add tomato sauce, stir. Add black beans and stir for about 2-3 minutes.
2. To serve: Add lettuce to plate. Top with the turkey or ground beef. Sprinkle cheese, tomatoes, and salsa. Enjoy!

PS.... the original recipe didn't call for corn or green peppers but I added it in because well, I love corn and had a pepper that was about to go bad!
